Trout is a name used for many different species of salmonids. The specie of trout that Lerøy produces is a rainbow trout that is a very suitable specie for farming. The rainbow trout have a fast growth compaired to normal trout and is very robust specie in farming. Lerøy is Norways largest producer of rainbow trout. FJORD TROUT® is used as a quality brand for rainbow trout of superior quality. Fjord trout is the brand name for trout which is farmed, packed and transported after the conditions for this standard which was developed together with the Norwegian Seafood Counsil.

Fjord trout is also, as with salmon, a nutritionally an excellent product. Fjord trout have a natural high content of protein and contains a lot of the healthy polyunsaturated fatty acids. Therefore also high in Omega-3 fatty acids (EPA and DHA) and rich in the fat soluble Vitamin D. Fjord trout is also a good source of the minerals iodine and selenium.

Fjord trout have shorter muscle finres in the fish meat than salmon. This gives the firm texture and makes it most suitable for dishes where is is marinated and heat treated minimally. Fjord trout is sold fresh,frozen, in portions, fillets or as whole gutted fish. The trout fillet can be smoked, marinated or hot-smoked, sugarsalted and cured.  It is most suitable for many kinds of dishes in example raw sashimi or sushi, ceviché or poké/sushi bowls. Farmed fish is excepted from the freezing demand before raw consuption as the farmed trout eats formulated diets and there is no risk for anisakis. It is excellent in soups and caserolles. Fjord trout can be baked, grilled, marinated, seasoned or used in a wok. Smoked Fjord trout can be used on sandwiches, in omelettes and fillings in pie and wraps, used in pasta dishes or as pizza topping.
