Poké bowl with halibut, avocado and mint

This poké bowl can easily be made in less than 30 minutes. The lemon-based poké sauce gives the dish an extra tasty experience.
Ingredients

fresh halibut fillet, skinned and boned, sliced thinly

bags of boil-in-the-bag Jasmine rice
Poké sauce
Grated zest of 1 lemon
Juice of half a lemon

1
sugar
1
tsp
1
fresh ginger, grated

tbsp
1
soy sauce
1
tsp
1
chilli, finely chopped

avocado, diced
8
tbsp
1
peas, frozen
1
1
pack of peasprouts
10
1
mint leaves
2
tbsp
1
sugar kelp or other seaweed
Method
Boil the rice, following the pack instructions and leave to cool.
Mix the ingredients for the sauce in a small bowl.
Dice the avocado then mix with the peas, peasprouts, mint leaves and finely chopped sugar kelp in a bowl.
Divide the rice between serving bowls, then add the vegetables and halibut and top with the sauce.
