Ceviche with cod, mango and clementine

Less than 20 minutes easy
Ceviche is perfect to serve as a starter or tapas. This version with clementine has a hint of Christmas.

    • 300 g cod, natural
    • 3 lime, juice
    • 1 clementine, juice
    • 1 tsp salt
    • 0.5 mango
    • 2 spring onion
    • 1 red chilli
    • 1 tbsp fresh coriander, roughly chopped

1. Dice the cod fillets and place in a large bowl.

2. Add the lime and clementine juice, salt and mix well. Leave the cod in the fridge while you chop and cut the rest of the ingredients.

3. Add the fresh pieces of mango, finely sliced spring onion and chopped red chilli and coriander to the bowl.

4. Mix well and serve in a smaller bowl, topped with some fresh coriander.
