Fry the finely chopped garlic in oil until translucent. Add whole cherry tomatoes and fry until golden brown on the surface, then add the sliced courgette.
Season with pepper and Provence herbs and leave to fry over a medium heat for several minutes until the courgette is soft.
Toss in the spinach.
Add the boiled pasta to the pan with the vegetables and drizzle with olive oil before serving onto two plates.
Melt the butter in the pan and fry the cod until it is cooked through and golden.
Place the cod on top of the pasta and squeeze lemon over. Enjoy!
