Ingredients
servings
gchopped salmon fillet, skinned and boned
tspchopped capers
tspfinely chopped sugar kelp
tspfinely chopped shallots
tspFrench mustard
tspchopped chives
Salt to taste
Black pepper to taste
egg yolk
pack Melba toast
Method
Mix all the ingredients, apart from the egg yolk, and let the flavours develop for around 20 minutes.
Shape the mixture as shown in the photograph and place the egg yolk on top.
Serve with Melba toast.
