Salmon tartar with sugar kelp

    • 120 g chopped salmon fillet, skinned and boned
    • 1 tsp chopped capers
    • 2 tsp finely chopped sugar kelp
    • 2 tsp finely chopped shallots
    • 0.5 tsp French mustard
    • 1 tsp chopped chives
    • Salt to taste
    • Black pepper to taste
    • egg yolk
    • pack Melba toast

Method

  1. Mix all the ingredients, apart from the egg yolk, and let the flavours develop for around 20 minutes.
  2. Shape the mixture as shown in the photograph and place the egg yolk on top.
  3. Serve with Melba toast.
