Grilled honey-marinated salmon with roasted root vegetables

The honey marinade gives this dish a mild sweetness, which tastes amazingly well with baked root vegetables.

    • 500 g fresh salmon, natural
  • Marinade
    • 4 tbsp honey
    • juice of a lemon
    • 0.5 tsp salt
    • 12 turns of a pepper grinder – or more if you like
  • Roasted root vegetables
    • carrots, sliced
    • root parsley, sliced
    • small celeriac, diced
    • swede, diced
    • 2 tbsp olive oil
    • 0.5 tsp salt
    • 4 turns of a pepper grinder

Method, root vegetables

  1. Mix the honey and the juice of half a lemon in a bowl, stir and pour over the salmon fillets. Season with salt and pepper.
  2. Slice the carrots and root parsley and dice the celeriac and swede. Place the vegetables in aluminium foil with the olive oil, salt and pepper and place under the grill. Grill for 15-20 minutes
  3. Grill or fry the salmon according to the pack instructions, around 15 minutes.
